Cheesecake Recipe from Mary Catherine Palewicz



This recipe is cheese cake that Mary Catherine Palewicz (Rebstock) used to make. It's more custard-like than New York style Cheesecake. It's sometimes called German smearcase.


Crust

2 cup flour
0.5 cup sugar
1 tsp baking powder
pinch salt
2 eggs beaten
0.25 lb butter melted

Mix dry ingredients. Beat two eggs and cut into a mixture. Melt butter, add to mixture. Mix with fork then knead with hands until pliable. Press into a 13x9x2 pyrex dish.

Filling

2 8oz cream cheese
1 16oz sour cream
1 cup sugar
4 eggs beaten
3 tbls corn starch
2 tsp vanilla
1 tbls lemon juice
3 cups milk

Cream cheese and sour cream until very soft. Add sugar. Beat until completely blended. Add beaten eggs, corn starch, vanilla and lemon juice. Beat until smooth. Add milk. Slowly pour into pie crust.

Bake 350 for 1 hour. Sprinkle with cinnamon while hot.
